Comments: 1. Temperatures in sandwich bar: tomatoes 41F, onions 54F; it was determined that onions had been chopped and placed into cooler ~10 minutes before arrival of inspector. 2. Neither staff nor operator are aware of safe cooking temperatures and do not appear to check the temperatures of the food. Considerabe discussion was held with operator to stress the importance of this. 3. ACDOH provided employee handwashing signs for two BOH sinks. 4. ACDOH provided FDA educational posters regarding safe cooling, hot holding, avoiding bare hand contact, ill food worker exclusion, and safe storage of raw and ready to eat foods. Discussion with operator treated all these topics, with focus on ill food worker exclusion. Operator does not currently have plan to ensure ill workers are symptom free prior to returning to work. 5. Significant carpentry work is has been subject of planning over last two years and operator states that the business will finally be pursuing these in the near future.
