Comments: Before a Permit to Operate will be issued the following items must be completed by the above facility: - Resurface or replace cutting boards that are deeply gouged with stains - Repair or replace the prep unit door hinge on the cook line - Finish the cleaning on the storage racks throughout the facility. - Both back exit doors do not prevent rodent entrance, provide a gap filler for the bottom of the door (sweeper) - Provide a proper air gap for the vegetable sink. - Provide thermometers for all cold holding. - Clean and sanitize all surfaces When the above items are completed call 315-789-3030 to notify the Department of the completed items.
