Comments: new section of restaurant has been added since opening in Feb 2014.(Plans were not approved for this additional construction by the health department.) At first were serving ice cream (after restaurant business normal business hours). Ice cream has been removed, and freezers, refrigerators, sink and commercial dishwasher have been added). Utility sink has not been added, large sink was added but is also being used for storing dirty dishes. recommend until mop sink installed to dump mop water in toilet. At present, there are 46 seats available for use in the facility. Historically facility has been permitted for the maximum of 26 seats ( see letter dated May 2, 2016). Per operator, facility never reaches capacity greater than 26, if a 27 customer does show up they will be turned away. Facility should remove additional seating, until such time an engineer is hired to evaluate the capacity of the sewage disposal system and submit plans of the sewage disposal system to the Hornell District Office for approval. discussed cooling and reheating. Foods such as sausage gravy and meatloaf are cooked portioned and frozen. Cold holding temperatures were 45F and below. Discussed glove use requirements with the cook. Hot holding temperatures were all 140F and above. Discussed thermometer calibrations with cook.

Mop sink not provided- owner states stiffer type mopping is done.Septic tank uncovered and grease trap removed during sewage repairs, no problems with back up or standing sewage observed. Satisfactory temperatures observed.
