Maintenance is lacking throughout the facility as well as cleanliness. All of the facility is extremely dirty an covered with grease and food debris. Minimal heat is provided in the facility one monitor is located in the kitchen area and one monitor located in the dinning area. the back section of the facility where the walkin is located has no insulation and you can see the rafters and sheathing of the roof. The shed in the back of the facility where paper products are stored has asphalt as a floor. all refrigeration in the facility was being working. The air temperature in the kitchen was approximately 45 to 50 degrees. Operator stated they have not had issues with pipes freezing. all hot holding equipment was working rice at 175 degs. sauces in steam table 160 degrees. |
