Comments: Several vacuum sealed bags of cooked lamb meatballs, raw chorizo, and cooked ground chicken patties found in both the walk in freezer and walk in cooler. Staff used a vacuum sealer that is located onsite to vacuum seal the above mentioned food items. Facility does not have an approved process review for reduced oxygen packaging from an approved processing authority. Staff cut open the vacuum sealed bags and removed the vacuum sealer from the establishment prior to the end of the inspection. Provided education. All remaining violations must be corrected no later than 11/11/14. Must send Corey DiLorenzo an email to [email protected] addressing corrective actions taken to all cited violations no later than 11/11/14.
