Provided food service training with all kitchen staff. Reviewed cooking temperatures (steaks-130F, ground beef-158F, Pork-150, Eggs-145F). Discussed cooling of foods in shallow depths (less than 4 inches) to meet cooling schedule of 120-70F in 2 hours, then 70-45F in an additional 4 hours. Also discussed option of using an ice bath to meet cooling schedule. Reviewed reheating requirement of 165F within 2 hours, then hot holding at 140F. Reviewed time and temperature control for safety/potentially hazardous food (TCS/PHF) such as sliced tomatoes and cut melons. Discussed cold holding temperature of 45F or less- facility uses 41F or less. Discussed using thermometer to evaluate temperatures. Discussed preventing bare hand contact with ready to eat food items. Discussed the requirement to wash hands following times of contamination and between glove changes. Facility has ordered parts for one of the fans in walk-in freezer condenser unit- observed food all frozen and unit functioning properly.
