A sliced tomato was measured to be 41 degrees F in the Sandwich Bain Marie. The Mechanical Dishwasher had a chlorine residual of about 100 ppm. The owner of the Red Carpet Motel has signed a lease with Emyrs Slaughter so that Emyrs is the only operator of the Mac and Cheese Factory and the motel owner has no input in the operation of this food service. The UV water treatment unit in the basement is still being maintained by the Motel according to the Food Service Operator, Kenneth Young. Report e-mailed. |

Item 14A: Insects, rodents present Comments: Operators have called a new pesticide company called "Pestech Pest Control Solutions." They are scheduled to come in tomorrow to treat the cockroaches. Operators will fax us a copy of the receipt after the pesticide treatment. The ventilation hood and walk-in cooler are now much cleaner. The operators have done a good job of cleaning the entire kitchen. |

Item 14A: Insects, rodents present Comments: Re-inspection to check on the status of the cockroaches and the cleanliness of the kitchen. Cockroaches are still present and the operators still don't have a certification for their previous pesticide applicator or a new pesticide applicator. By Tuesday of next week, operators either need a certificate in hand for their current exterminator, or they need to have another exterminator. The cleanliness of the kitchen has gotten much better since the last inspection. Underneath the stove and fryer has been cleaned, vent filters are being cleaned. Operators still need to do more cleaning, specifically in the walk-in cooler. There is still a fire extinguisher missing in one of the spaces on the hotel building. An extinguisher needs to be at all designated spaces. |
