Comments: Oxtail in the cooler was measured at 50.5 degrees. Observed between the oxtail and Saran wrap covering the oxtail was a green mold. Also, sliced sweet potatoes in a gravy sauces were measured at 51 degrees Fahrenheit. The operator could not tell when the temperature of the cooler rose above 45, nor could he tell when the food was placed in the cooler. CDI: TTS foods discarded. |
