Item 8F: Improper thawing procedures used Item 15A: Floors, walls, ceilings, not smooth, properly constructed, in disrepair, dirty surfaces Comments: Inspection measured temperatures first at service steam table. Pork ribs were 162 degrees internnal temperature. Brisket was 182 degrees internal temperature. pulled pork was 183. They come out of reach on cooler that has items in it that are between 39 and 42 degrees today. No meat smelled spoiled or rancid. No french fries cooking at this time. They are fried in oil, allowed to drain the dripping oil off then are put in a bowl for seasoning to be added prior to service. Corn on the cob comes frozen this time of year. Normal procedure according to the operator: the corn is placed in boiling water to cook. It is removed with tong to bowl or other container if needed, wrapped in plastic with gloved hands and placed in the steam table for hot holding then service. This done around 5 pm for dinnner hour. Todays inspection ended about 1615 and no corn was being boiled yet as there were no customers since the start of the inspection today. If some was ordered now with no customers, it would come out of refrigeration, plastic removed and boiled. It is served with no plastic wrap. It is possible at times that pieces of plastic wrap could remain on the items but it woúld not be intentional. Checked bread, no mold, its rye bread for reubens. Rolls show no evidence of mold, stored in reach in cooler when not in use for the day. |
