Operator, Mr. Elliott, in process of relocating dry goods from back storage room into side kitchen (back storage room also used for furniture moving business). Only pizzas (no other foods) under preparation ATOI. Corrections from previous inspection: bathroom door closed to kitchen; grate in place over pizza oven (for ventilation/exhaust hood); wall around and deep fryer, itself, adequately cleaned; Baine Marie cooler, refrigerators and Baine Marie cutting board adequately cleaned; and no foods improperly stored.

Comments: ATOI = at time of inspection. Cold-holding (Baine Marie): marinara sauce - 37 degrees F. No foods in hot-holding ATOI. Ecolab (chlorine based) Proforce kitchen sanitizer used in spray bottles and not with stored wash cloths (paper towels used instead). Observed three chicken cutlets properly cooked to 171, 180, and 185 degrees F (all above 165 - ok). Time as a Public Health Control (TPHC) system in use for pizzas with toppings; however, discard times had not been recorded for today upon arrival to facility (discard times from previous day still on board, as per operator). Pizzas on display: chicken, white, veggie, and meat lover removed from oven between 10:45 am and 10:55 am. Upon arrival to facility, observed operator immediately record pizza discard times on white board. Reviewed with Mr. Elliott that discard time per pizza must be recorded immediately after removing from oven.
