Receiving temperature are greatly improved with the majority of food items being received at greater than 140 degrees and below 45 degrees F. In the most recent temperature logs, the pureed foods are the most common items to be received with internal temperatures lower than 140 degrees, and the lowest temperature recorded was 127 degrees F. Strict disposition guidelines are being followed so that any foods received at less than 140 degrees are being reheated to above 165 before holding. | ||

Item 5A (Critical): Potentially hazardous foods are not kept at or below 45°F during cold holding, except smoked fish not kept at or below 38°F during cold holding. Item 6A (Critical): Potentially hazardous foods are not kept at or above 140°F during hot holding. Comments: All food items served at "Total Senior Care" are prepared offsite by the "Olean General Hospital" and transported to the facility in insulated boxes just prior to service. Based on observations made during the inspection, it appears that food prepared at OGH is not being cooked/reheated/held at proper temperatures prior to shipping and that the shipping temperatures being recorded on the logs are not reflective of the actual internal food temperatures. Additionally, "Total Senior Care" staff failed to properly identifiy and correct the issue despite clear evidence of that there was a problem. The end result of this is that "Total Senior Care" program participants were regularly served temperature abuse food, which is classified as a "public health hazard" under Subpart 14-1 of the NYS Sanitary Code. Please be aware that the NYS Sanitary code requires immediate correction of all identified "public health hazards" in permitted food service establishments, or the closure said facility. Therefore, "Total Senior Care" must reject any future deliveries of TCS foods which do not meet delivery temperature guidelines in order to avoid repeating these violations. Temperature abused food may NOT be served to program participants. |
