Comments: Upon arrival to facility, observed new open-top food prep cooler being delivered. New unit was temporarily stored outside. Operator stated that he will have unit transferred inside and installed after he closes for the day. Existing unit still in place, with lower compartment measured to be holding at 32F at time of inspection. Upper compartment (open-top section) still not holding at 45F or less; however, it is not being used to stored potentially hazardous foods. All other violations from previous re-inspection have been corrected: basement dough prep area - new laminate walls installed on two sides and tiles added to floor (see 15A). Area observed to be clean. Pizza time card system properly implemented. Pizza prep cooler open top section: mozzarella 41F.
