Kitchen staff stated that lettuce is closely monitored and mixed to prevent freezing on bottom. Chemical dishwasher rinse temperature measured at 156.3F Reach-in cooler in defrost mode at time of inspection, but temperature logs did not show abnormalities. Product thermometer and (chlorine) sanitizer test strips easily accessible on-site. Observed proper glove use and hair restraints. Kitchen observed to be kept very neat and well-maintained.
