Hot held food items were measured as follows (degrees F): Pasta with olive oil - 143, Pasta with cheese - 180, Asparagus - 155. Food in the other Traulsen Cooler and the Walk-In Cooler were measured to be between 36 and 38 degrees F. The mechanical dish washer had a wash temperature of 164 degrees F and a rinse temperature of 186 degrees F. Suggested that the operator request using Time as a Control for a number of food items since they typically dispose of many food items after two hours. The operator thought that this was a good idea and is requesting that they be allowed to use Time as a Public Health Control. Report e-mailed.

The following temperatures were recorded (degrees F): Cold Milk in Cafeteria - 39.9, Chocolate Milk in Cafeteria - 43.9, Ham Salad - 44.4 & Sliced Turkey - 43.9 in Sandwich Cooler, Precooked, Breaded Chicken in Walk-In Cooler - 36.2, Chicken Rice Soup cooking on stove - 174.8. The following Air Temperatures were recorded (degrees F): Vegetable Cooler - 40, Walk-In Cooler - 36. The final rinse temperature on the automatic dish washer was 184 degrees F. Report e-mailed.
