Large container of soup (navy bean) observed to be cooling on food prep counter at ambient air temperature; however, product was measured to be 170F. Operator stated that soup would be broken down into shallow containers (product depth less than 4 inches) once reaching 140F on counter, and then placed in cooler (uncovered) for proper cooling storage. Later during inspection, observed operator divide product into two shallow pans and place into cooler. // New(high-temp sanitize) dishwasher observed to be installed. Unit temperature gauge reading 197F (following rinse cycle). // Food-product thermometer and sanitizing solution test strips readily available. // Reach-in cooler, across from front counter: American cheese 44F. Kitchen reach-in cooler 38F. // All products on steam table (soups, stews, gravies, sauces) measured to be 180+F. // Discussed complaint received pertaining to cigarette smoking occurring in establishment, particularly during bar hours. Operator stated that they have prohibited smoking in the establishment for a long time now, and that it no longer occurs. No evidence of smoking/ash trays observed within establishment during inspection (outdoor ashtray container observed outside of facility near front steps). // No sign of live pets observed with food service area, except that dogs were heard to be barking within office (behind closed doors) off of rear-end of kitchen. Operator stated that dogs stay in office, and that they are taken in and out through adjacent-rear door of establishment and are not taken through establishment.
