Cover to cold holding unit has been removed allowing the cold air to escape. Properly cold holding foods inside this unit at 45 degrees F or below has been an issue in the past and removing the cover to enclose the cold air is not a good idea. Food items were brought from walk in cooler today and placed in this unit around 10:30am & foods were temped from 41 degrees F to 43 degrees F at 12:15pm.
