Comments: At the time of inspection the facility was receiving their delivery. The back line chef needed table room and double stacked freshly cooked beef (140-145F) into one fish bin and placed in the walk-in cooler. Discussed proper cooling and changes that have been made since the last inspection.The facility shows that it has been more attentive in using proper cooling on many items such as turkey roasts. The facility also stated that they will be closing next Monday to complete a professional deep cleaning of the facility.
