The actual product measured 61 degrees, 59 degrees, and 59 degrees using the inspector's calibrated food testing thermometer. Product was said to have been brought out of walk-in cooler ~ 1 hour ago to prep. 1 bin of meat was cooked immediately and the other 2 bins were allowed to be put back in walk-in cooler to cool to <=45 degrees since it was out <2 hours. All out less than 2 hrs and reheated to 165dF. Unit was turned up and more water was added to steam table.
