Discussed the responsibility and routine for cleanoing the ice machine. Digital stem thermometer used. Mechanical dishwasher working as per manufacturer's specs; discussed cycling the machine prior to cleaning to ensure proper wash and rinse temp, and frequency for cleaning and sanitizing of the dishwasher trays.

All wood and other porous surfaces throughout kitchen and dishwashing room have been removed and replaced by stainless steele. All floors, walls, and ceilings are smooth, cleanable, and non-porous. All coolers contain thermometers. Hand barriers, digital stem thermometer, and sanitizer is available. Restrooms are adequate.
