Comments: Recieved a food illness complaint of a couple that became ill after eating pizza and wings. A thorough inspection revealed no obvious hazards of food contamination. The kitchen does need a thorough cleaning however and a routine cleaning schedule going forward. Metal stem thermometers also need to be calibrated regularly and used to monitor food temperatures during cooking and cooling. Chicken wings are stored in the walk in cooler and are temping at 40F. Owner reports that these wings go from the cooler directly to the fryers where they are cooked fully and then served. No "par cooking" occurs. All refrigeration units are below 45F and each has an accurate thermometer present. Food workers were wearing gloves and hair restraints. Reviewed bare hand contact and ill food worker policy.
