Comments: All refrigerated storage equipment which is used to store cold potentially hazardous (TCS) foods have monitoring thermometers, interior temperatures were maintained at less than 45 dF. No hot potentially hazardous (TCS) foods found under hot-holding during inspection. Kitchen staff were observed properly using plastic gloves and utensils during inspection, discussed routine hand washing with Kitchen Staff during inspection. Thermocouples are available for evaluating cooked potentially hazardous (TCS) foods. Checked wiping cloth solution- Quaternary Ammonia sanitizer was maintained at +200 ppm, test kits are available near 3-bay sink in kitchen. Will conduct a HACCP training with Kitchen Staff later in the year.

Comments: Inspection of snow cone operation conducted at Wisner Park. Observed proper glove use and use of scoops to prevent barehand contact of ice used for snow cones. Observed temporary hand washing station with continuously flowing warm water, soap, paper towels, and a waste water bucket under the spigot. Discussed proper hand washing between glove changes.

Comments: A Time Table of Compliance Date of February 20, 2018 has been established to correct the violations listed above. A re-inspection will be conducted after this date to determine compliance. Employees were observed washing hands and properly using plastic gloves during inspection. Thermocouple available to evaluate cooked potentially hazardous (TCS) foods, no hot holding of cooked PHFS was observed during inspection. Sanitizer test kits (quaternary ammonia & Cl) available for evaluating wiping cloth solution and dish machine. Facility following proper cooling procedures of cooked soups, reviewed re-heat and hot-holding temperatures with Kit. Manager during inspection. Numerical thermometers available inside refrigerated equipment used to store cold potentially hazardous foods at less than 45 dF.
