Comments: Observed accurate probe thermometer. Observed hand washing sink stocked with soap, paper towels, and hot running water. Observed facility's test strips for evaluating levels of quaternary ammonia in sanitizing solutions. Observed several previously cooked and cooled items in bottom section of make unit at temperatures of 37-38F. Discussed all food served at facility must be prepared onsite.

Also discussed warewashing at bar and 3-bay sink in kitchen. All wares are to be sanitized as the final step, after washing and rinsing. Demonstrated calibration of probe thermometers during inspection. Discussed storage of pickled eggs and sausage. If made on premise, items may be stored in refrigeration, possibly in ice provided the ice is replenished as needed to ensure temperature of food items is 45F or less. Copy of inspection report to be mailed to operator, who does not use email.
