Comments: Discussed holding temperatures & discard times of TCS food on the service line with operator. Based on this discussion, a formal waiver from holding requirements will be issued for these food items. New dishwasher installed since the last inspection. Operator indicated that the dishwasher is supposed to use hot water as a sanitizer, but the new booster is not set hot enough to reach sanitizing temperature. The booster display indicates that it is set at 145 degrees F, but the minimum hot water sanitizing temperature allowable by NYS code is 170 degrees. Typically, dishwasher boosters are set to 180 degrees minimum to achieve this temperature. This was not cited as a Sanitary Code violation because the low-temp chemical sanitizer was still in use. Please note that unecessary traffic of persons (students & teachers) through the food preparation and utensil washing areas is prohibited by code. Food service areas must be restricted to food service personnel. If students will be assigned food service duties, they must be supervised by the food service staff at all times while in the kitchen. If un-permitted outside groups will use the kitchen facilities and equipment when school is not in session, they must be also be supervised by food service staff to ensure that proper food safety and sanitary guidelines are observed.
