Comments: Comments: 1) The current procedure used for cooling the chicken wings, after the initial cooking, does not meet recently introduced guidelines from the New York State Department of Health regarding proper cooling procedures. Your current procedure needs to be changed immediately. As we discussed during the inspection, the cooling method currently in use at your other restaurant would be acceptable for cooling the chicken wings. That method, as I understand it, involves cooling the chicken wings in a single layer, uncovered, on trays in a tray-rack, inside the walk-in cooler. This method meets current cooling guidelines. 2) The violations cited in this report are repeat violations, the majority of which are simple to correct. It is expected that they will be corrected at the time of the next inspection which will likely take place some time in the first quarter of 2017.
