That method, as I understand it, involves cooling the chicken wings in a single layer, uncovered, on trays in a tray-rack, inside the walk-in cooler. This method meets current cooling guidelines. 2) The violations cited in this report are repeat violations, the majority of which are simple to correct. It is expected that they will be corrected at the time of the next inspection which will likely take place some time in the first quarter of 2017. |
